Fine, white, and quietly responsible for the rise in everything you’ve ever baked. Bi Carb Soda (Sodium bicarbonate) is the pantry powder that does its work in a single, silent moment of chemistry. It meets an acid, releases a rush of tiny bubbles, and lifts a cake, opens a crumb and makes a pancake puff. That’s the party trick. The rest of its talents are the reason serious households never run out.

This is not a flavour ingredient. It is a transformation ingredient, and it works in every room of the house.

In the Kitchen

Bi Carb is the quiet force behind scones, soda bread, banana bread, pancakes, muffins and gingerbread. Stir it into buttermilk, yoghurt, honey, brown sugar, lemon juice or cocoa and the reaction begins at once. A pinch in biscuit dough helps them spread and brown. A light dusting on meat before cooking raises the surface pH, so it browns deeply and stays tender. A spoonful in the soaking water softens dried beans and chickpeas so they cook faster. Whisk a little into tempura batter and the coating shatters. It also rescues burnt pans: cover the base with bi carb and a splash of water, simmer gently, and the scorched mess lifts away. Use it to scrub chopping boards, freshen the fridge, and deodorise lunchboxes and flasks.

Around the House

A paste of bi carb and water is a gentle abrasive that cleans sinks, benchtops, cooktops, ovens and grout without harsh chemicals. Sprinkle it into smelly shoes overnight, over carpets and rugs before vacuuming, or down the drain followed by hot water for a fresher pipe. It deodorises bins, nappy buckets and the inside of the dishwasher. Dissolve a little in warm water to wipe down kids’ toys and the high chair. It lifts tea and coffee stains from cups and clears kettle build-up when paired with white vinegar.

Outdoors

Pack a pouch in the camping box. Bi carb scrubs grimy BBQ grills and plates, freshens the esky, and cleans pots and pans when the water supply is limited. Sprinkle it in bins and compost buckets to take the edge off summer smells, and into wet boots and the boot of the car. Scatter it on oil spots on the driveway and leave it to absorb before sweeping. It also cleans garden furniture, outdoor cushions and the dog’s bedding when it’s time for a freshen-up.

In the Laundry

Add half a cup to the wash alongside your usual detergent and it softens the water, boosts cleaning power and helps neutralise stubborn odours. It’s the old-fashioned secret for gym gear, towels, nappies and school uniforms. Soak whites in warm water and bi carb to brighten them, or make a paste to treat sweat marks and spots before washing. Add a little to the rinse to leave clothes smelling fresh rather than perfumed.

Use it sparingly and measure it properly in the kitchen, because too much leaves a soapy, metallic edge. Never seal bi carb and vinegar together in a closed container, as the pressure builds quickly. Avoid using it on aluminium, polished stone or delicate surfaces, and test any paste on a hidden spot first.

Sift with Cacao Powder and Coconut Flour for brownies and chocolate cakes with a dark, tender, even crumb. Fold into Cinnamon Powder, Nutmeg and Ginger Powder for gingerbread and spiced loaves that rise tall and fill the house with winter. Stir with Coconut Sugar and buttermilk for scones and pancakes with a light, golden lift. Soak with Red Kidney Beans or French-Style Lentils for a softer, faster-cooking pot. Whisk into Potato Starch Flour batters for a light, crisp coating on vegetables and seafood. Pair with Citric Acid for a fizzing, natural cleaner that tackles kettles, sinks and stubborn stains.

Pure. Fine. The Quiet Worker. Yours.
